The City Government of Zamboanga is planning to establish a roasting facility intended for the “lechoneros” or local entrepreneurs engaged in roasting pigs inside the city slaughter house at barangay San Roque.

Amelia Amar, Task Force Karne team leader, said in an interview that the facility will cost P6.5 million and they expect it to be fully operational by December in time for the peak season of roasted pig business.

The roasting facility will have 290 pits where roasting of pigs can be done. There will also be an enclosed lavatory for cleaning.

According to Amar, the city will collect P100 per head of pig to be roasted as fee, excluding changes for the charcoal and labor.

“Centralizing the roasting of pigs in the city will ensure that the meat is safe as it passed meat inspection,” Amar emphasized.

This will also regulate the illegal slaughtering and operation of not accredited slaughterhouses in a highly urbanized city.

She also added that this is one of Mayor Maria Isabelle Salazar’s priorities in line with health and small-scale business.

In this city, there are 20 lechoneros operating within the 7-km radius. (R.G. A A. Go)
